I never tried to make trofie and I bought this kind of pasta in an Italian store. Trofie is Ligurian pasta made with flour and water. After 10 minutes add pasta in boiling, salted water until al dente. Stir in potatoes, pasta, and green beans. Drain pasta and green beans. I prefer making gnocchi and other kind of pasta. In another medium pot of boiling, salted water to a boil and add green beans to medium pot. If someone is interested in making fresh trofie or fresh pesto leave a message and let me know and I’ll write a post with both the recipes. Heat pesto in a large skillet over medium heat.

I have no idea what Trofie pasta looks like, so I bought some long, chewy hand-rolled pasta. This recipe was one of those times…pasta, black beans, clams- all in a sauce that’s pretty much just a full bottle of wine. Cook the pasta until al dente. Reserve the water for the pasta. Add the wine and bay leaves and boil over high heat until reduced to 1 1/2 cups, about 10 minutes. Or how well wine and Chinese black bean sauce really goes together. Discard the bay leaves, stir in the black bean–garlic sauce and chile, cover and remove from the heat. Well, maybe it’s not that risky, but I was worried the sauce wouldn’t be much of a sauce. Add the garlic and shallots and cook over moderately low heat until golden brown, about 4 minutes. In a pot of boiling salted water, cook the asparagus until just tender, about 2 minutes.
